Pinks....


~ Lets Paint the town Pink ~
(Pickled eggs and labneh dip)

Spring is the time when there is color and  joy everywhere . Right 
from the vibrant flower beds displaying the most outrageous hues
 to the exuberant colors of the Indian festival  Holi -the enigma of
 Pink seems to conquer the northern hemisphere in the 
colors of celebration. 




With Easter and  Holi right around the corner , what could be better than 
adding a bit of fuchsia to our humble eggs too. These pickled egg appetizers 
are  colorful , healthy , delicious and best of all absolutely a breeze to
make !! After all with all those festivities & fun around who wants to be
 in the kitchen for long........


Spring is the season of garden delight too , its the  time when nature 
awakes from its long sleep to  welcome the colors of warmth and life, 
and the gorgeous trees and  shrubs loaded with bunches of flowers 
silently seem to bid adieu to the winter frost & chill . 



The deep pinks of the pickled eggs are perfect for spring !!!
As per wiki -pickled eggs are hard boiled eggs that are cured in brine .
 Just like  other  preserved foods the recipe evolved in the olden times
 to preserve surplus eggs from the farm , so that they could
 be consumed later . 


While many parts of the world relish this pickled version as a favorite
 hors d'oeuvre some places confine it to as pub food served with pickled 
onions and  fish. Owing to the presence of beets in the pickling solution the 
eggs from  Pennsylvania Dutch country  have a beautiful pink color. 


Pickled eggs 
( The easy peasy way)


Ingredients - 4 hard boiled eggs ( peeled) , 1/2 cup white vinegar, 
1/4 cup beet juice, 1/2 tsp sugar , 6-7 black peppercorns , salt to taste. 


Method - Mix together all the ingredients ( except eggs) till the 
sugar dissolves. Keep the eggs in a glass jar and pour the vinegar 
mix over it. Refrigerate for 5-6 hours . To Serve- drain the liquid ,
divide into halves and  season with some freshly crushed  pepper .
( Don't soak the eggs for too long or else they'd be tough and chewy)
( If you don't like pickles replace vinegar with water for just  
beautiful pink color)



Opt for a healthier yolk free version by removing the yolks and filling up
 the cavities with some freshly whipped caramelized onion labneh dip . 
The mild tanginess of Lebneh and crunchiness of the onion will surely 
leave everyone  craving for some more .....(BTW a generous spread of 
labneh tastes great on sandwiches , pitas and paratha so go 
ahead n indulge)


Caramelized Onion Labneh Dip
Ingredients 
2 cups regular yogurt ( home made curd is perfect too), 2 large red 
onions finely diced, 1 tsp chopped onion greens/ chives , 2 tbsp blanched
 peas ,1 tsp olive oil  , salt to taste 

Method
Combine yogurt n salt and place the mixture on a large muslin cloth . 
Tie from all the four ends and hang on the kitchen faucet to drip . 
Remove after 3-4 hours . Untie and keep the cheese aside. 
Drizzle some oil in a skillet and saute onions till golden .Cool and
mix with the cheese. Mix in peas, chopped onion greens n drizzle
 some olive oil( opt). Serve.

The pig & chick...


~ Breakfast Time ~

Playtime n story telling sessions are integral
part of the vacations. I always feel nothing
is better than reading out a good story to the
kid , short educative ones are not only a great
pastime but also a wonderful aid to build values
n teach them uncountable life skills. My little one
tremendously enjoyed the 'Little Pig n the Chick '
story that I read out yesterday. The story revolves
around a cute little chick n a piglet who try to mimic
the birds without actually realizing that they are
much different to the winged creatures.....

Half fried egg , peppercorns ,olives, red pepper , tomato sauce n lettuce

Tip- Large metallic cookie cutters are a great way to make cute
shaped fried omelets/ pancakes. Place a cutter on a skillet n pour the
the egg/batter .Cook till done. Decorate n serve.

ZooZoos


~ Of ZooZoos and IPL ~

Cricket has become one of the most exciting games in
the world today. For Indians cricket is not just a sport
its almost a religion - a religion that worships the players
as not mere sportsmen but demigods. Almost a week after
the wonderful victory at the World cup , the IPL fever
is here to grip the entire nation in the cricket mania again .
IPL consists of 10 teams consisting of players from
around the world. Besides cricket , something else that
keeps us glued to the screen are the small white creatures
with ballooned bodies & egg heads commonly known as
the ZooZoos from the Vodafone commercials. These cute
little endearing characters have been wooing the audience
since last couple of years , it would be an injustice not to call
them the IPL (ad break) stars too ..what do you say ???

Mad about Blues


~ Mad about Blues ~

James Cameron's completely immersive 3-D sci fi
epic- Avatar with all its blue aliens was so much liked by
my little one that for some days her girly favorite Pink
color mania had changed into a sudden blue !!! "Mama now
my favorite color is blue .. " Blue dress , blue colors, blue
hanky ,blue bedcover my lil one suddenly wanted every
thing blue. I agreed with her blue fever but her request
for blue food really left me in a fix. I jus knew about
blueberries as something naturally blue but then
these are not available in India .. Blue jellies , blue
syrups , blue cakes .... Google showed a list of some
whacky blue things readily available in the market ...
but then they wern't available here:( Finally blue
squash , mint candies n blue M&Ms were the only
things i could get ... Thank God her blue mania
felt contented with these .......& off went her blue
color fever in a couple of days ...
Yesterday while helping my nephew with his science
project I came to know abt the Cabbage juice as natural
pH indicator ( red cabbage when shredded n boiled turns
the water blue !!! - adding lemon juice makes it turn
pink while addition of baking soda darkens its color)
After a lot of googling I was eager to incorporate this
into my food experiments .....(ahh what fun we had
dipping the eggs ,radish ,white onions in this concoction
jus wished I had known it before... :) :) :)


The Pandora Rice
( or should i call it The Avatar Rice )

Rice cooked in red cabbage water n veggies .
( The cabbage water doesn't add much of a flavor to the rice
so feel free to experiment with your own flavorings n spices )




The Magic Eggs


Eggs dipped in red cabbage water ( for blue shade ).
Add few drops of lime juice to the cabbage water
& immerse the eggs for pink color ones.

Artsy - Crafty Challenge ( Apr 2010 )

The Babushka Piggy Bank

Sending our paper mache Russian Doll (babushka)
piggy bank for the Apr Artsy Crafty Contest . Papermache
is a great craft for all ages . Although its very simple to make
but owing to tons of pasting becomes a little messy at times .
Blow a large ballon , once knotted or tied try to create a
basic babushka shape by pressing the ballon in the centre .
Stick a jam bottle lid on the base of the ballon for a stable
standing of the project . Mix 3 tbsp fevicol with a cup of water,
tear lots of newspapers into small pieces , dip into this solution
n stick on the ballon ( say 4-5 layers ). Let it dry overnight.
Now gently cut a coin size slot on the top . Color & decorate .
Finally coat a layer of clear varnish to protect the colors .
( Suitable for kids 4 yrs + under adult supervision )

Easter Time-1


~ Easter Time -1 ~

Easter is approaching so its time for some yummy
easter eggs & gummy candies n jelly beans . The
easter lilies are in full bloom n the spirit of spring
is in the air ... Easter reminds me of my school days
when the sweetest , yummiest sugar easter eggs
were available in our canteen n the most exciting
part of these eggs was to split them open n find
an array of colorful candies in them .. Ahh sweet
memories revived ... I don't know how to make
those but definitely we can shower some love
on our little ones by making some cute n easy
to make easter theme foods ..........


Flowers on my egg !!

Hard boiled egg, spinach, red cabbage n carrot .
Gadget - flower shape craft punches
Punch out flowers from spinach , red cabbage n
carrot slices , stick on the egg with mayo .


The Egg basket

hard boiled eggs, savory loops , spinach n beet juice
or few drops of edible color .
Divide the egg into two halves , cut a thick slice from
the ends to make a stable base for the baskets. Soak the
slices in spinach/ beet juice or edible color ( few drops
mixed in half a cup of water ) . Once the desired color is
achieved pat dry n place on the basket. Cut a savory loop
in half n place as handles .

IPL Fever


~ IPL Fever ~
Of Kings & Devils...

The third season of Indian Premier League-
IPL started on 12 th March - n of course it has
gripped my home too . My hubby is a die hard fan
of cricket n my lil one seems to follow her
dad's footsteps . Both are desperately waiting for
Mar 19th - when they would go to the Kotla Stadium
to watch their dream teams playing live . The Odd
One Out ( ahhh thats me!!! ) would be more than
happy to stay at home n take a long cozy nap ...z..z..

This food art is a symbolic representation of
the lion of the - Chennai Super Kings n of course
magical devils of The Delhi Daredevils :)
