Mexican Mania


~ Mexican Mania ~
The Indo Mexican way

Nothing can be easier than making some  power boosting, protein 

and energy packed Quesadillas. Besides being a perfect crowd pleaser ,
 this versatile Mexican snack is great kick of nutrition for tiny little 
taste buds. Wiki says - Quesadilla ( pronounce - kesadiya) is a flour
 / corn tortilla ( pronounce- tortiya) or a roti filled with a savory 
mixture containing cheese , bean mash and other ingredients , folded 
into a half moon shape and warmed till the cheese melts and 
the top becomes slightly crisp. The dish originated in Mexico 
and the name is derived from Queso - cheese in Spanish . 




A fusion of Indian and Mexican taste this Indo Mexicana version boasts

 of some boiled and  mashed kidney beans ( rajma beans ) tangy tomatoes,
 crunchy onions and peppers and a pep of  garlic - but you can add just about
 anything to customize these to your taste buds. I love my portion with some 
extra punch so off goes in lots of  green and red chillies and roughly torn
 aromatic basil ........ :) :) 



I always dream of making some  corn ones with the traditional Mexican flour  
Masa Harina someday  - but its unavailability urged me to switch over to the 
multigrain version. Hidden with the goodness of whole wheat flour, soy flour, 
oats and  some cornmeal ( makki ka atta) these are perfect for a snack or a 
complete meal.  




It wouldn't  be incorrect if i call these a colorful  makeover of the age old humble 
stuffed parantha . A generous mash of spiced veggie bean mixture , some cheese 
and lots of love is all thats required to make these .




 Even if there are some left over rotis -go ahead with those !!!! A stylish name 
some tangy accompaniment and it sets off to become a hit with the family esp the
 lil ones. Paired ours with some  mango salsa- I was lucky to spot some
imported varieties of mangoes even in this off season . But you can replace
 it with some kiwis, avocados , melons, pineapples even papayas or any soft 
pulpy sweet fruit of your liking. 


Multigrain Quesadillas 
(Multigrain tortillas filled with cheesy bean and veggie mash )




Serves 2-3 
 Ingredients
For tortillas -1/2 cup whole wheat flour ,1/3 cup oats flour (powder Quaker Oats
in a mixer till fine ), 2 tbsp soy flour, 2 tbsp cornmeal ( makki ka atta ) , 2 tbsp milk, 
salt to taste and some warm water for kneading . 
For bean mash filling - 1 cup boiled and mashed kidney beans( rajma) , 
1 large onion finely chopped , 2 tomatos finely chopped, 1/4 cup chopped bell 
peppers , 2 tsp chili -tomato sauce ( or regular tomato sauce) 2-3  flakes crushed
 garlic, 1/4 cup  grated mozzarella /  cheddar cheese,  Salt to taste, 2-3  tsp vegetable oil 
( for shallow frying) 

Method
Mix all the tortilla ingredients & knead into a soft pliable dough. Keep aside for
 10- 15 mins. Divide into 4 roundels & roll into flat discs or rotis on a lightly
 floured surface. Put on a hot skillet and flip once small specs appear . 
Cook from the other side till lightly browned. Place on a clean paper towel 
and cover  loosely with a cloth napkin. Keep aside. 
Heat a tsp oil in a pan, sauté garlic and onion. Add tomatoes and cook till mushy.
Mix in bell peppers, mashed beans, sauce and salt. Cook for a  min .
Spread the bean mixture on a tortilla ,sprinkle grated cheese & cover 
with the second tortilla.Cook on a greased skillet for 3-4 mins or till both
 the sides are crisp and golden.Cut into wedges and serve. 




Sweet & sour Salsa - Mix together  1/2 cup chopped ripe mango / kiwi/ 

 avocado , 1 chopped onion, 1 chopped tomato, 2 tsp lemon juice, 1 tbp finely 
chopped mint/ basil/ coriander. Season with  some salt and pepper . 
Toss well and serve. Tastes great cool.

Children's Day

Children's day (in India) is celebrated on 14 th november each year. 
The day commemorates the birthday of our first Prime Minister , 
Pandit Jawaharlal Nehru who  loved kids and believed that they 
 are the future of our country and should be nurtured and loved 
dearly. As a tribute to which his birthday is celebrated as
 children's day. Most schools have cultural programs on this
 day. Often the teachers enact plays, narrate stories , sing songs
 and shower them with yummy treats and colorful gifts.

Garlic oregano cheese bread from local bakery (or substitutes)* 
topped with tiny cheese circles (use small bottle caps/larger end of a
piping tip), cucumber, cherry tomato, grape and parsley.  


My lil one is very fond of  fairytales - thus for the celebrations at home 
her dad bought her a big book of '365 fairytales 'so that we never 
fall short of great stories for reading out to her every night. To add 
a wonderful zing to the day , I decided to bring alive the little 
land with  -' The Frog Prince' and the ' Magical Toadstools '. 
spotted some garlic oregano cheese bread in one of the local 
bakeries and decided to put in to use with some veggies 
and  loads of fun !!

Garlic oregano cheese bread from local bakery (or substitutes)* 
with tiny cheese circles green tomato , cucumber and olive eyes , 
cherry tomato ketchup mouth and cucumber feet . For the cheesy tongue-
keep a cheese slice diagonally & cut out a long ribbon using a 
toothpick, make a cut on the bread and insert it gently  

*Half moon shaped bread can be replaced  with  folded stuffed paratha ,
dosa, uttapams, crepes, pancake , whole wheat bread circles, tacos

Review- CCD


~Review - Cafe Coffee Day ~

A cup of coffee shared with a friend is happiness
tasted & time well spent !!

Over the last decade the humble cup of home brewed
beverage has undergone a drastic revolution
and the coffee culture has beautifully taken over the
Indian mass. Cafe Coffee Day is remarkably one of
the trailblazers of this stylish cafe trend....

A lot can happen over a cup of coffee !!!

Owing to some family commitments I had missed the
golden opportunity to attend the unveiling event
of the Mysore Royal ..& by any chance I didn't want to
miss the opportunity of tasting the fresh flavors of
the new food menu. As a part of the invite I chose
the CCD at Shipra Mall for the menu sampling.


The lively ambience of the beautifully lit cafe filled with the
most enchanting aromas of the coffee beans was a perfect
paradise for the coffee lover in me. Mr Asif Ansari ,asst
marketing manager introduced me to the differently
enabled brewmasters & latte artists better known
as the the silent brewmasters ...Like a young child
my eyes were glued to the magical technique of
transforming a cup of coffee into an exquisite
piece of art !!!!

The new menu is a great selection of food items
that can be beautifully summarized as- 'something
to munch on', ' something that is filling ' or
'something that simply satisfies a sweet tooth'...
The foods wonderfully suit the modern consumer.


The Small Eats section is perfect to pamper our going
global taste-buds- the Cheesy Veg Croissant filled
with garden fresh vegetables & a blend of subtly flavored
sauces &cheese offers a wonderful touch of French
delight while the soft yet crunchy ChilliCheese toast
gives the feel of a light heavenly treat . The freshly
baked Chocolate Cookies doused with delicious chocolate
chips are perfect accompaniments to flavorful Latte,
mocha or cappuccino. Hot n spicy veg/chicken puff & the
delectable veg samosa are some more must try items
from this menu.


I simply loved the Tex mex Veg Cheese Sandwich ..
this delicious treat in the Big Eats category is a perfect
mix of Mexican salsa & cheese wrapped in soft bread
topped with cornmeal. My lil one accompanying me was
playing a perfect critique to the Spinach & corn cheese
sandwich- crunchy greens & juicy corns enrobed within
the freshly baked bread was tastier beyond expectations.

Apart from sharing his immense knowledge on coffee
beans & bread doughs Mr Asif told us how a majority of
young coffee lovers crave for the Tandoori Chicken &
Smoked Chicken Sandwiches from this menu .


The humbly prized filler combos starting out for as
low as Rs 59/-are undoubtedly the perfect fillers.


The Sweet treats from the cafe played like little
angels to our visit. 'The Dessert Shot '- which is essentially
a small bite of dessert put together in attractive cups is the
star attraction of the new menu.The luscious & creamy Mango
delight & the rich & smooth Belgian choco shots are great
soothers for the clamoring sweet tooth.These dessert
shots which ooze indulgence with every bite are prized at
just Rs 20/- ...unbelievable !!!The classic Black forest
cake in a cup , the signature oozing chocolate cake-
Indulgence , Nutty Fudge Brownie & Chocolate fantasy
are sure to pamper you in their new avatars.....

This menu is currently available in Delhi NCR &
will be launched in all of the CCD cafes throughout
India phase wise.
